If you have the seniors sit on chairs in a circle and place a tosser in the center, rallies tend to last longer.
As the number of balloons increases, the whole thing becomes larger, which might also make it easier for seniors to make attacks.
Easy-Peasy Balloon Volleyball

When you play balloon volleyball, you might sometimes hit it too hard and it flies off in an unexpected direction.
In those moments, attaching a string to the balloon so you can control it will help you keep the rally going longer.
It’s a simple tweak—just attach some plastic ribbon to the balloon and move it—but you’ll need to be thoughtful about how you guide it and how much force you use.
If you pull too hard on the string, the balloon’s movement can become restricted or it may fall faster, so be sure to apply gentle, controlled force.

Start by playing with one balloon, then introduce a second one partway through.
Having to keep track of the extra balloon may help stimulate the brain.

Volleyball using a bigger balloon than a regular one is really exciting, isn’t it? Older adults will probably see the big balloon and think, “Wow, that’s huge!” By calling out to each other to keep the rally going and helping toss the big balloon, everyone can cooperate more, which may increase interaction among participants.
Placing a table in the center makes it easier to keep the rally going.
Since big-balloon volleyball sometimes uses both hands, it also helps move the body in a well-balanced way on the left and right.

One of the great things about balloon volleyball is that you can adapt it using everyday items.
Try a supersized version by putting five inflated balloons into a clear trash bag.
It’s especially fun and colorful if each balloon is a different color.
Have older adults seated in chairs rally the giant balloon back and forth.
You can arrange everyone in a circle, or split into two teams for a head-to-head match to make it even more exciting.
Because the balloon is so big, the amount of force you use may feel different than usual.

Let’s have some fun with balloons by trying volleyball and basketball.
Since these sports often come up on TV and in newspapers, many older adults may already be familiar with them.
Have everyone sit on chairs arranged in a circle, and try to get the balloon into a hoop suspended in the center.
You can also split into left and right sides for team play.
This activity combines elements of balloon volleyball—where you pick up falling balloons and keep the play going—with basketball, where you aim for the goal.
You can enjoy both at the same time.
Some older adults may have played volleyball or basketball in the past, which could bring back memories and make the activity even more exciting.

Even if you want to play volleyball, a regular volleyball is heavy and drops quickly, which makes it difficult for older adults.
In that case, try playing volleyball with a balloon.
As you can see in the video, a balloon floats down gently, making it easier to tell where it will land, so older adults should be able to enjoy it plenty.
You could also split into teams and compete to see who can keep a rally going the longest.
