The Senshu region of Osaka Prefecture is especially famous for producing mizunasu (water eggplant). Compared to regular eggplants, mizunasu has a higher water content, making it juicier with a unique texture. Besides simmered dishes and light pickles, it’s also delicious simply grilled with a sprinkle of salt.
