Yase-uma, a local dish from Oita, is made by boiling flat noodles of wheat flour and coating them with roasted soybean flour (kinako) and sugar.

Sometimes roasted barley flour (hattai-ko), sweet red bean paste, or brown sugar is used instead of kinako.

It is said to be so rooted in the region that it often appears in school lunches.

Although the name is unusual, there seem to be several theories about its origin.

Imagawayaki is perfect for a little snack and also great for carrying around, so how about adding it to your festival stall menu? First, make the batter by mixing 1 egg, 20 g sugar, a pinch of salt, 80 ml milk, 80 g cake flour, and 1 teaspoon baking powder.

Place a mold on an oiled frying pan, pour in the batter, and steam-cook for about 10 minutes, then add 60 g of sweet red bean paste.

Pour more batter on top, cook for another 5 minutes, and finish by browning both sides until golden.
